LOL!!!!!!!!!!!!!! I didn’t say you should spend all weekend at this cool relaxation spot. If you are easily bored like me, I know a special place you can just go and relax, even if you are on a budget. That special place is the Lekki Leisure Lake.

Lekki Leisure Lake is a lake side resort overlooking the Atlantic in the Lekki peninsula area. The resort is operated and managed by Optima Leisure, a leisure and hospitality company based in Lagos. If you need a safe place you can hang out with your friends and family, then Lekki Leisure Lake is the best spot in Lagos for you. Not like other beach fronts in Lagos that harbors criminal elements and that can be unsafe for you, this is an exclusive beach front that has services that will make you feel relaxed and remove your mind from the regular hustle and bustle of everyday Lagos.

There are activities available that can pump your adrenaline which include jet ski, quad bike, pedal boats, pontoon boat and wave boat. The facility also has reservations for you and your guests for a specific time and that. That it will be restricted to only you and your guests for a specific time period. This exclusive reservation offers the following services;

  • A full food and beverage service for the specified number of guests with
    allowance for spill over.
  • Quad bikes for both adults and children.
  • Jet ski rides, for all age groups (But kids under 12 years are NOT allowed) Free training and guidance is offered.
  • Pontoon boat rides, wave boat rides, pedal boat rides, and Banana boat rides. Boat ride across the lake to the main beach and Atlantic Ocean (Beach chairs and umbrellas can be set up).

Food and beverages include: spit roasted chicken (whole), spit roast ram (whole or half), spit roast beef, grilled chicken (wings and pieces). Barbecue fish, hamburgers, hot dogs and full salad bar. Jollof rice, stir fried sea food and an assortment of side dishes. Drinks will include; bottle of our house red, 4 beers, 5 soft drinks and water. This services costs N20,000 for each individual and they only accept a maximum of 100 people.

The Lekki Leisure Lake opens during weekends and holidays and costs a gate fee of N1,000 for adults and N500 for children under the ages of 10. Guests are not allowed to come in with their food and drinks. You will need to buy them at the venue. Lekki Leisure Lake can be accessed from the second (2nd) lekki round about on the lekki-epe expressway, along the arab contractors road. You will pass the lekki Events center and St. Andrews School on Remi Olowude st before you enter the Okunde Blue Water Scheme. MY FIRST EXPERIENCE TRAVELLING BY AIR.

Oh yes, I just had my first flight experience and there ain’t nothing to be ashamed of. It was quite unique and I overcame my phobia for flying or travelling by air. Now I’m more interested in travelling and seeing what it’s like in other cities and countries.

I travelled on an official duty with my superior to Bayelsa and our flight was for 3pm from Lagos to Port Harcourt. Our flight was delayed till 7pm. Our flight was by Arik Airlines. We boarded a bombardier jet and after all the security details mentioned to us, we took off for Port Harcourt. It was a smooth take off. Lagos was a beautiful sight from the air. I think Governor Ambode has done well by lighting up Lagos roads. And believe you me, Lagos is a large city.

The flight went well. We only experienced turbulence once. We had a smooth landing in Port Harcourt. But the arrival lounge was embarrassing. Wet and made of white tents. The arrival lounge building is still under construction. We then went into Port Harcourt and booked rooms in a hotel in the government reserved area of the city. The foreign expatriates have left the city in droves and that has depleted the income in the state. The night life in Port Harcourt still exists though.

We than went to Yenegoa, Bayelsa state via the famous east-west road which I learnt was still under construction. The journey was smooth. After our meeting at the NCDMB office in yenegoa, we went straight back to the Port Harcourt airport and we arrived 30 minutes before our flight scheduled time which was meant for 5pm. This time again, our flight was delayed from 5 to 8.45 pm. The departure lounge was manageable but it had no air conditioners. The security checks was strict. You had to take off your shoes and belts and any metallic objects in your possession and pass to the electronic barrier. You would go through this procedure again even if you had to use the gents.

We had to wait till 8.45 pm to board our plane, an aerp 360 jet. I sat at the back of the plane and my airs nearly got burst due to the noise from the engines. Again Lagos was a beautiful sight at night. Well lit. The view when landing was fantastic. We had a save landing and I was lucky to get a quick cab home late that night and I thank God for a smooth journey. But next time, I hope to take a vacation to a place more exotic and affordable. I think the government should introduce a travel or vacation allowance, to allow Nigerians to travel more. What do you think?

CURRIED CHICKEN AND WILD RICE SOUP

Are you tired of cooking the same types of soups, week in, week out? For a fact, I am also tired of eating the same type of soups also. So I was browsing through the internet and found this new recipe, of which I know a lot of Nigerians haven’t tasted and decided to share it with you. I love soup. I love eating soup. We like to take other things like pounded yam, cassava (garri, fufu) and semo or amala with it. But I’d rather prefer eating soups alone because they are nutritious. Hmmmmmmmmm……………………..my taste buds are going crazy here mennnnnn!!!!!!!!!!!!!

Below is a recipe and directions on how to cook curried chicken and wild rice soup. I will cook it this weekend to see how it takes. Also remember to follow me to know when I will post more recipes for you and your loved ones.

CURRIED CHICKEN AND WILD RICE SOUP.

INGREDIENTS:

1 cup uncooked wild rice
1 tablespoon olive oil
1 medium white onion, peeled and diced
2 large carrots, diced (about 1 cup)
2 stalks celery, diced (about 1 cup)
3 cloves garlic, peeled and minced
4 cups good-quality chicken stock
3 cups cooked, shredded chicken
2 teaspoons curry powder*
1 bay leaf
1/2 teaspoon ground cumin
1/2 teaspoon kosher salt
1/4 teaspoon freshly-ground black pepper
1 (14-ounce) can coconut milk (**see note below)
optional garnishes: chopped fresh cilantro, crushed red pepper flakes, shredded coconut

DIRECTIONS:

Begin by cooking your wild rice. Stir together the wild rice and 4 cups of water in a medium saucepan until combined. Cover and heat over medium-high heat until boiling. Then reduce the heat to medium-low, and simmer (covered) for 40-45 minutes until the rice is cooked and tender. Strain out any extra water, and remove from heat.

While the rice is cooking, heat the olive oil in a (separate) large stockpot over medium-high heat. Add the onion, carrots and celery and cook for 6-7 minutes, until the onion is soft and translucent, stirring occasionally. Add the garlic, and cook for an additional 1-2 minutes, until the garlic is fragrant, stirring occasionally. Add the chicken stock, chicken, curry powder, bay leaf, cumin, salt and pepper, and stir to combine. Stir in the coconut milk until combined. Continue to cook until the soup reaches a simmer. Then reduce heat to medium-low, cover partially with a lid, and let the mixture simmer until the rice is ready.

Once the rice is cooked, stir it into the soup until combined. Remove the bay leaf. Then taste the soup, and season with extra salt and pepper if needed.

Serve warm, topped with optional garnishes if desired.

Note, you can prepare your coconut milk by shredding coconut and sieving it with water, to get the milk.
